Amedei’s fourth Golden Bean, awarded by the Academy of
Chocolate in London in 2013, Blanco de Criollo expresses the full richness and
finesse of Peruvian cocoa.
This fine cocoa is locally grown by smallholder farmers who work within sustainable agroforestry systems, integrating fruit and timber trees trees into their cocoa plantations.
The beans are fermented for 7 days in tiered wooden boxes
and then slowly sun-dried in solar tunnels for 7 to 12 days—a meticulous
process that brings out the unique aromatic notes of this exceptional cocoa.
The result is a refined, well-balanced chocolate: smooth
on the palate, with delicate acidity, hints of honey, subtle notes of wood and
dried plum, and a sweet, jam-like finish.
